This delicious savory tart uses a paleo pie crust with only 4 ingredients! It is perfect for a gluten free and dairy free diet. We used almond flour that is much higher in healthy fats and protein than other gluten-free flours and it tastes incredible! Ingredients: Makes 3 individual pies For the crust: -Blanched almond flour- 2 cups -Sea salt – ¼ tsp -Coconut oil, melted – 2 tbls. -Large egg – 1 For the filling: -Shitake Mushrooms, sliced -12 oz -Scallions, sliced -1/4 cup -Olive Oil -3 tbls -Salt and pepper to taste -Fresh Thyme -6 sprigs Directions: -Preheat oven to 350 degrees. -Place flour and salt in a food processor and pulse. -Add in coconut oil and egg. Wait until oil has cooled down before placing in food processor. Pulse until mixture forms a ball. -Take dough out of processor and press into individual non-stick metal pie tins. -Sauté shitakes in olive oil until just tender. Add scallions and thyme and cook for about 3 minutes. -Add mushroom mix to tart crusts -Bake in oven for 15 minutes or until crust is browned.
